Reuben Dip

Ingredients

  • 1/2 cup corned beef, diced or shredded
  • 1/4 cup sauerkraut, drained and coarsely chopped
  • 1/4 cup Swiss cheese, shreadded
  • 4 ounces cream cheese
  • 1/4 cup Russian dressing
  • Rye bread, sliced

Instructions

Throw everything into the crockpot and cook for a couple hours until the cheese is nice and melted. Alternatively, mix and place in a baking dish, then cook at 350 degrees for 20-30 minutes until the top is golden brown and it’s bubbling along the edges.

Serve it with sliced rye bread, for dipping.

I don’t know where Steve originally found this recipe, but it’s a keeper – basically a sandwich in dip form. Steve looks forward to corned beef season at Costco every year like most kids anticipate summer vacation, stocking up 2 at a time while it’s in stock for St. Patrick’s Day, and this is a great way to use up any leftovers (though you can also use sliced corned beef or pastrami from the deli section).
