Whole Wheat Banana Bread

Ingredients

  • 1/4 cup vegetable oil
  • 1/4 cup plain yogurt, Greek yogurt, or sour cream (use whole or low fat, but not non-fat)
  • 2/3 cup white sugar
  • 2 eggs, slightly beaten
  • 3 bananas (about 1 cup once mashed up)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/3 cup hot water
  • 1/2 cup chopped walnuts (optional) (you could also put in chocolate chips, if you’re that kind of person)

Instructions

Mash bananas and sugar together, then mix in oil and yogurt/sour cream. Mix in beaten eggs (let’s be real, add the eggs and mix them in the bowl, no need to dirty another bowl), blending until smooth.

In another bowl mix all purpose flour, whole wheat flour, salt and baking soda. Add dry ingredients to banana mix alternately with hot water. Stir in chopped nut meats (lol).

Pour batter into a greased 9″ x 5″ loaf pan. Bake at 325 degrees for 1 hour and 10 minutes (check it with a toothpick after an hour, it should come out with some crumbs, but no wet batter).

  1. I have tried a bunch of banana bread recipes over the years, but this is what Becca suggested as her go-to option. The parentheticals above are Becca’s secrets of success.
  2. Whenever I make a banana bread, I sprinkle the top with a hefty dusting of crunch brown sugar (demerara or turbinado) as well as plenty of cinnamon. If I have an extra banana, I also like to split it lengthwise and place cut-side up across the top of the batter. If you sprinkle that with sugar before baking, you’ll get a nicely bruleed banana bite running down the top of each slice.
  3. For something much less wholesome than whole wheat, this seriously chocolatey banana bread recipe is delicious.
