Ingredients
- 2 10-ounce boxes frozen chopped spinach
- 16-ounce container sour cream
- 1 cup mayonnaise
- 1 package Knorr® Vegetable Recipe Mix
- 3 green onions, chopped
- 1 can water chestnuts, drained and chopped (optional)
Instructions
Cook spinach in microwave according to package directions to fully thaw. Squeeze out all liquid using hands, towels, colander, etc. to full drain, and place in a large bowl. Add all remaining ingredients and mix to combine.
Place in refrigerator for at least 2 hours to chill. Eat with bread, baby carrots, bell peppers, crackers, etc. Serve it in a hollowed out sourdough bread bowl, if you’re feeling fancy.
Rachel’s Comments
Yes, this is the recipe on the back of the package. Carrie introduced this to us years ago, and it’s only slightly more complicated to make than the classic sour cream & onion soup dip that our family favored. The only change I make is doubling the amount of spinach, and I usually include only ~1/2 of the 10 ounce can of water chestnuts.
