Dutch Baby (aka “Big Pancake”)

Ingredients

  • 4 tablespoons butter
  • 4 eggs
  • 2/3 cup milk
  • 2/3 cup flour
  • 1 tablespoon sugar
  • Pinch of salt

Instructions

Preheat oven to 425 degrees. Heat 10″ cast-iron skillet (or other oven-safe pan) on stove over low; plop in butter and allow to melt. Turn off heat once melted and leave pan there while oven finishes heating.

Mix all remaining ingredients in blender. Once oven is fully heated, pour batter into melted butter, which will swirl up the sides, and immediately put pan into the oven.

Cook for 15 minutes at 425 degrees. Turn oven down to 300 degrees and cook another 10 minutes.

To serve, cut into wedges and top as desired. Suggestions include syrup, powdered sugar and lemon juice, strawberries and whipped cream, caramelized bananas, etc.
