Ingredients
- 1 cup shortening (2 sticks butter or margarine)
- 1 1/3 cup white sugar plus 3 tablespoons for coating
- 2 eggs
- 1 teaspoon vanilla
- 3 cups flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2 teaspoons cinnamon
Instructions
Cream together shortening and white sugar. Beat in eggs and vanilla. Mix in flour, baking power, and salt.
Chill batter in fridge for at least 2 hours. Once chilled, roll batter into 1″ balls. Mix together remaining sugar and cinnamon, then roll each ball to coat. Place 1″ apart on baking sheets.
Bake at 350° for 10-12 minutes. (Do not over-bake! These cookies do not seem to brown because of the cinnamon coating, but they are done in 10-12 minutes.)
