Shortbread

Ingredients

  • 1¼ cups flour
  • 3 tablespoons cornstarch
  • ¼ cup sugar
  • ½ cup firm butter, cut into pieces

Instructions

In a bowl, combine the flour, cornstarch, and sugar. Cut in the butter until the mixture is very crumbly and no large pieces remain. With your hand, gather mixture into a ball; place in an ungreased springform pan. Firmly press out dough into an even layer. With the tines of a fork, make impressions around the edge of dough, then prick the surface evenly.

Bake in 325° oven for about 40 minutes or until pale golden brown. Remove from oven and, while hot, cut with a sharp knife into 8 – 12 wedges. Sprinkle across the top with about 1 tablespoon sugar. Let cool completely, then remove sides of pan and lift out cookies.
