Cut veal into pieces, removing all fat and connective tissue. Pound each piece with the dimpled side of the meat tenderizer. Prepare three dishes:
- ½ cup flour seasoned with salt, garlic powder, and poultry seasoning
- 2 eggs, beaten
- Seasoned breadcrumbs
Dredge each strip with flour. Dip into the eggs, and then coat with breadcrumbs. Sauté in frying pan on medium in 1 tablespoon margarine and 1 tablespoon oil for 3 – 5 minutes a side.
Variation: Veal Parmesan
Preheat oven to 400°. Place sautéed veal on a cookie sheet. Top with seasoned tomato sauce and shredded mozzarella cheese or mozzarella/Romano blend. Bake for 5 minutes.

- Veal can be a little tough, so tenderizing is important. Also, do not overcook the veal.
- You can make chicken parmesan as well, which will cook a little longer in the oven. You can also make turkey parmesan with sliced turkey breasts.
