Steak Fajitas

Marinade

  • 1 cup lime juice
  • ¼ cup chili powder
  • 1 tablespoon oregano
  • 1 teaspoon garlic powder

Marinate a flank steak or tri-tip in the refrigerator for 1 to 2 days. Broil or barbecue 10 to 20 minutes a side, depending on thickness (Tri-tip takes longer than flank steak). Slice thinly across the grain to serve.

  1. Serve on tortillas with chopped lettuce, onions, and tomatoes, shredded Cheddar or Mexican cheese, and Rachel’s pico de gallo and guacamole.
  2. You can substitute boneless chicken breasts instead of steak for chicken fajitas. If you’re feeling lazy, you can use a store-bought marinade instead of making your own.
