Marinade
- 1 cup lime juice
- ¼ cup chili powder
- 1 tablespoon oregano
- 1 teaspoon garlic powder
Marinate a flank steak or tri-tip in the refrigerator for 1 to 2 days. Broil or barbecue 10 to 20 minutes a side, depending on thickness (Tri-tip takes longer than flank steak). Slice thinly across the grain to serve.

- Serve on tortillas with chopped lettuce, onions, and tomatoes, shredded Cheddar or Mexican cheese, and Rachel’s pico de gallo and guacamole.
- You can substitute boneless chicken breasts instead of steak for chicken fajitas. If you’re feeling lazy, you can use a store-bought marinade instead of making your own.
