Instructions
Heat a large frying pan to medium and add 1 tablespoon of oil. Liberally salt and pepper a trimmed rack of lamb. Brown on all sides. If desired, you can let the lamb cool before continuing.
Coat the lamb thoroughly with Dijon mustard and then breadcrumbs. Bake in a 350° oven for 45 minutes. Let sit for 15 minutes, then slice.

This recipe is elegant, delicious, and so easy that there are no secrets. Better stores sell rack of lamb already frenched. If not, trim the fat from around the bones. I use Progresso Italian Breadcrumbs.
