This is where the Secrets of Success go. Section can alternatively be named “Comments” and can swap out “Glenda’s” with another name in the title.
- You can vary the amounts of the ingredients and season to taste. You can use any mixture of ground beef, turkey, pork, and lamb. Turkey is drier and might need more ketchup or tomato sauce. Needless to say, I use more onions. You can use cornflake crumbs or matzah meal instead of breadcrumbs.
- This recipe is very similar to meatloaf. It is very moist, and the meatballs tend to fall apart while browning or when you put them in the tomato sauce. For Dad’s meatballs, cut out most of the tomato sauce and ketchup. The mixture will be much drier and firmer, and will hold together better while cooking. The meatballs will pick up some tomato flavor from the tomato sauce.
