Mix for Marinade
- 1 cup honey
- ½ cup fresh orange juice
- ¼ cup soy sauce
- ¼ cup fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1 tablespoon fresh chopped cilantro
Marinade a whole chicken in pieces (or equivalent amount of parts) covered for 2 hours at room temperature, turning occasionally. Place chicken in shallow baking dish in single layer. Drizzle with 1 cup marinade. Bake, basting with pan juices every 15 minutes until cooked through (about 45 minutes).
Remove chicken to serving platter and cover to keep warm. Reduce cooking juices on stove over medium heat until slightly thicker – about 15 minutes. Spoon sauce over chicken and sprinkle with chopped scallions. Serve with remaining sauce alongside.

United wanted to upgrade its airline food and Dad thought Sheila Lukins was the greatest cook. Can’t you just see those stewardesses chopping fresh garlic and ginger for every meal?
